Have you ever looked in your fridge and found all single vegetables?
The stragglers?
The ones that didn't make the cut for the weeks side dish for the family?
A single yellow squash?
A small zucchini?
An undersized sweet potato, or any type potato for that matter?
One half of an onion?
A bell pepper?
Even a few stalks of asparagus or some lonely brussels sprouts?
If you have, do you wonder what to do with them?
I have the solution!
Peel the potato, or don't.
Some folks really like the skin of a potato.
Place the potato, in a pan, with a bit of olive oil.
Sear until al dente.
Add the onion.
Cook until onion is caramelized.
Add the remainder of the veggies.
Throw in a bit of minced garlic.
Cook to desired softness of veggies.
Personally, I like my veggies a bit crisp.
What a quick and easy way to use all those veggies that are just hanging along in the fridge screaming to become an amazing side dish!
Pair with your favorite protein and you have made a complete meal!
I have considered adding some cooked slices of chicken or beef, or even some shrimp, to complete the stir fry.
You could even go meatless by placing the stir fry veggies over baked spaghetti squash.
I happen to have a spaghetti squash on my counter.
This may be tonight's dinner!
The combinations of veggies and proteins are endless!
AND
The combinations change with what is in season!
